Banana Bread Baked Oats

 
 

For a breakfast that tastes just like everyone’s favourite loaf cake, this has to be one of my favourite ways to enjoy oats on-the-go. They may take a bit of preparation, but it’s worth it when you have a fridge stocked with a tasty breakfast to grab and go!

Ingredients


3 medium bananas (2 for mashing, 1 for topping) 180ml milk 1 egg or flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, left to stand for 10 mins) 2 tablespoons maple syrup ½ teaspoon baking powder 200g rolled oats 1 teaspoon cinnamon 1 handful (40g) chopped walnuts
Pinch of salt
To serve: yoghurt, berries, nuts, and seeds of choice


Method


1.
Pre-heat the oven to 180°C. Line a 20cm square baking dish with baking paper.

In a large bowl, mash two of the bananas with a fork. Stir in the milk, egg, maple syrup, and baking powder, and beat until smooth.

Stir in the oats, cinnamon, chopped walnuts and salt, until well-combined.

4.
Pour the mixture out evenly into the prepared baking tray. Slice the remaining banana lengthways and place each half in the top of the mixture, middle side facing upwards and rounded side pressed into the oats.

5. Bake for 25-30 minutes, until lightly golden brown and firm and springy to touch. Allow it to cool for 10 minutes before slicing. Serve warm with yogurt, berries, nuts and seeds, or place in your Tupperware for a breakfast on the go.
