Blueberry Tray Bake Bars

 
 

A buttery shortbread-like base, juicy blueberry and banana filling & crumbly crumble topping! Perfect to share with family and friends, these blueberry tray bake bars are so easy & delicious!

Ingredients


For the shortbread layer:
250g of flour
125g of butter
100g of sugar
1/2 teaspoon baking powder
1 large egg

For the blueberry layer:
400g fresh or frozen blueberries
1 banana sliced
2 teaspoons of cornstarch
Zest of one lemon Juice of one lemon 40g of granulated sugar


Method


1.
In a medium bowl toss together the ingredients for the blueberry layer (apart from banana) and set aside.

In a separate large bowl whisk together butter and sugar. Add egg, flour, baking powder and mix until well combined but crumbly.

3.
Press about three quarters of the mixture into the bottom of the prepared pan. Add slices of banana and pour the blueberry mixture over top.

4.
Crumble the remaining dough over the blueberry mixture.

5.
Bake in the oven for about 45 minutes at 180C, until crumble layer starting to turn golden.
