Packed full of important nutrients like protein, healthy fats and antioxidants, this brunch is our favourite way to start a weekend.

Ingredients


4 large potatoes

2 vines of tomatoes

1 avocado

Handful of pumpkin seeds

3-4 eggs

Rosemary

Salt & pepper

Olive oil


Method


1.

Cut the potatoes in cubes, boil in salted water until they start to feel soft but they are not too soft that you can mash them with your fingers

2.

Fry the potatoes in a pan with olive oil and rosemary until crispy

3.

Create a few holes and crack the eggs, add the tomatoes to the pan and bring the pan to the oven

4.

Bake for 8-10 min at 200C until egg is cooked

5.

Serve with avocado and pumpkin seeds
