Cucumber Peanut Salad

Ingredients
1 cucumber
1 tbsp sesame seeds
Sauce
2 tbsp of peanut butter
2 tbsp tamari
Juice of 1 lemon
1 tsp of ginger, grated
1 tbsp maple syrup
1 tsp sesame oil
Water to make it thinner, if needed
Method
1.
Slice the cucumber with a mandolin or knife
2.
Add to a jar or container with a lid
3.
In a separate small jar add the sauce ingredients and give it a good shake until well combined
4.
Pour the sauce into the cucumber jar, add sesame seeds and shake well
