Pesto Gnocchi
Pesto and gnocchi are a match made in heaven! This pesto sauce is creamy and super rich, made with oat cream and pesto, plus some sun dried tomatoes to give a different twist! Finish with fresh cherry tomatoes and basil.

Ingredients
500g of gnocchi
3 tbsp of pesto
180ml of oat cream
1 cup of chopped sun-dried tomatoes in oil
Salt and pepper
Cherry tomatoes and basil to finish
Method
1.
Cook your gnocchi according to packing instructions

Fry your tomatoes and oil for 2 min
3.
Add your cream and let boil for 2 min
4.
Turn the heat off and add pesto, salt and pepper
5.
Mix in your gnocchi and serve with fresh basil and cherry tomatoes
