Pumpkin Muffins

Ingredients
200g flour
15g pumpkin pie spice
5g baking powder
1.5g baking soda
3g kosher salt
425g pumpkin puree
200g eggs
81g brown sugar
59g olive oil
5g vanilla extract
182g chocolate chips
Method
1.
Preheat the oven at 180C

Mix all the dry ingredients

In another large bowl, whisk together all of the wet ingredients until smooth.

Add dry ingredients to the wet ingredients and stir with a spatula until some flour is still visible.
5.
Add in the chocolate chips and continue stirring until no more flour is visible, but do not over-stir! Allow the batter to rest for 15 minutes.
6.
Separate in muffin into cups.
7.
Bake for 25min until cooked though.
