Ricotta & Spinach Pasta Shells
These easy spinach and ricotta stuffed shells recipe is hearty and comforting. The combined feta, ricotta and spinach makes a wonderful filling for jumbo shells and goes perfectly with tomato sauce! Definitely a crowd-pleasing vegetarian dinner.

Ingredients
20 jumbo pasta shells 1 chopped shallots 1-2 tablespoons olive oil 4 handfuls of spinach 1 teaspoon of honey 100g feta cheese 250g ricotta cheese 1 large egg Salt and pepper 1 tablespoon fresh thyme leaves
Method
1.
Cook the pasta al dente, according to package directions. Drain and set aside.

Add chopped shallot to a pan with heated olive oil and cook until it begins to brown. Add honey. Add the spinach and cook, stirring occasionally, until the leaves begin to wilt. Set aside.

Stir together ricotta, crumbled feta, spinach, thyme, egg, salt and pepper, until well combined. Add the pasta sauce to the bottom of a baking dish and spread.

Stuff each pasta shell with a generous amount of the spinach and ricotta mixture, and place in the baking dish.
5.
Bake covered with foil for 25 minutes. Remove the foil and continue baking until the top begins to brown and the sauce begins the bubble, another 10-15 minutes
