Sweet & Savoury Pancakes
Pancake day is the perfect opportunity to empty those cupboards and create a delicious and low budget meal. There’s so many flavours but sometimes you can’t beat the classic lemon and sugar. As a savoury twist - as I would usually serve them for dinner I like to use some cheese and peas.

PREP TIME 5 MINUTES COOKING TIME 10 MINUTES
DIFFICULTY EASY
Ingredients
120g of flour
240g of milk
1 egg
Olive oil to cook
Filling: sugar and lemon or peas and cream cheese
Method
1.
Mix all the batter ingredients in a bowl until well combined.
2.
Add to a hot pan a spread to cover all the surface - try to keep it thin. Cook for 2 min until dry on the edges and flip. Cook for one more minute.
3.
For the sweet version sprinkle sugar and drizzle lemon. For the savoury version, spread cream cheese and add some peas.
4.
Fold in quarters and serve warm.
