Veggie Udon Noodles
If you’re pushed for time but want a flavour-packed and nutritious meal, stir-fries are an absolute must! This dish is brimming with plant-based diversity, protein and full of umami flavour.

Ingredients
275g of cooked udon noodles 220g of bright and crunchy veggies 200g of tofu, in cubes 2 tbsp of sesame oil
2 tsp of tamari/yondu
Sesame seeds and chilli to finish
Method
1.
Fry tofu with 1 tbsp of sesame oil and a pinch of salt, set aside.
2.
Fry veggies for 5-6 min with the remaining sesame oil. Add udon noodles and 2 tsp of tamari or yondu seasoning. Stir until well combined.
3.
Serve with sesame seeds and chilli as garnish.
