Viral Jennifer Aniston Salad

 
 

Apparently this is what Jennifer Anniston ate on the set of Friends everyday for 10 years, so I had to give this a try. Full of delicious, nutritious & colourful ingredients, this is a great recipe for meal prepping and for getting those all important plant points too.

PREP TIME 10 MINUTES
DIFFICULTY EASY


Ingredients


1 pouch of microwave quinoa

1 cucumber, chopped

1 pepper, chopped

10g of dill, chopped

10g of mint, chopped

50g of roasted and salted pistachios, chopped

1 x 400g can chickpeas, drained and rinse

1/2 block of feta cheese

For the dressing:

Salt to taste

50ml of olive oil

Juice of 2 lemons

Pepper to taste


Method


1.
In two jars separate half of the quinoa, and layer half of the cucumber, pepper, and chickpeas. 

2.
Add the broken feta, chopped herbs and chopped pistachios at the top of the jar.

3.
Mix all the ingredients of the dressing, separate in two takeaway containers. 

4.
When ready to eat pour the jar over a bowl, serve the dressing and mix well.
