Rainbow Grains Salad

Ingredients
1 butternut squash
Seeds of one pomegranate
1 pouch of mixed grains
1/4 block of feta
80g of rocket
1 can of peas, drained
For the dressing:
2 tbsp of olive oil
2 tbsp of apple cider vinegar
1 tbsp of honey
2 tbsp of grain mustard
1/4 tsp salt
Method
1.
Chop and roast the butternut squash until golden.

In a small bowl, whisk together the mustard, olive oil, vinegar, honey, salt, and pepper.
3.
Mix the grains, roasted butternut squash, peas, feta cheese, pomegranate seeds with the dressing. Serve and enjoy!
